Newly opened Ceiba rooftop Mexican restaurant at Conrad Orlando

Ceiba is a declaration of affection towards Mexican cuisine, offering contemporary interpretations of traditional Mexican tastes in the city of Orlando.

Ceiba, now located on the seventh floor rooftop of Conrad Orlando, is under the leadership of chef Stephen Ullrich. The restaurant strives to present a modern interpretation of Mexican cuisine, while also honoring the carefully selected ingredients that showcase the rich history and culture of the country’s beloved dishes and skilled suppliers, according to a statement.

The interior design of the restaurant showcases warm sunset hues, embellished with touches of bronze and gold. Adorned with tropical foliage, statues of iguanas, and a terrarium, the atmosphere is complemented by wrap-around windows that provide stunning views of the Evermore Bay. Guests can also enjoy nightly firework displays from nearby Orlando theme parks.

Visitors have the option to begin their meal with “botanas,” also known as snacks, such as the Oaxacan-influenced “tetela de tinga” filled with chipotle-infused chicken, corn masa, and mole rojo. My husband and I both tried the Mayan marinated pork chop, known as “chuleta de cerdo Poc Chuc.” It was the best pork chop we’ve ever had. So tender and flavorful. We also had a dessert taco filled with passion fruit jelly, all made with freshly made tortillas every day.

Ceiba offers an extensive selection of over 100 agave-based spirits in their drink menu, which can be sampled in flights or enjoyed in traditional cocktails. For those who prefer non-agave spirits, the “Dust Cutter” menu offers a variety of drinks made with whiskey, bourbon, and scotch. Additionally, there are options for zero-proof drinks.

The eatery provides the option of dining indoors or outdoors, and also has private rooms available for groups of up to 30 individuals.
